Variegated Leaves
Like the familiar garden hostas, some plants get white, yellow, or pale green streaks in their leaves. This seems a lot more common in monocots. Hostas are also monocots (in Asparagaceae) and become variegated as a result of mutations of cells in one or more of the layers of the leaf. I imagine it is the same for these unusual plants.
